This particular method of cultivating oysters in France was pioneered by Francis Helie in the 1950s.
He discovered the basis of this technique while recuperating in Jersey from wounds sustained while serving in the French army during the Indochina War.
This thriving company is now run by his sons Thierry and Michel, and his grandson Xavier.
